One of the biggest obstacles faced when launching a food business is the high cost of setting up a commercial kitchen. The Commissary is a commercial, licensed kitchen facility with equipment and the support of food industry services, available only when you need it. Aspiring food business entrepreneurs will have access to a one-of-a-kind facility located in downtown Rochester to test, prepare, market, and sell their products.
The Commissary is a kitchen only for when you need it. On average, a rental hour in the kitchen will be $22/hour. Members will schedule their time in the kitchen online.
A rental in the kitchen reserves you a 10 foot prep area with access to short-term refrigeration, hand sink, vegetable sink, our 40’ line of commercial grade equipment, and our dishwashing area.
A Performance Kitchen will be available for rent for private events, pop-ups, and cooking classes.
A cold storage tote can be rented for $75/month and a locked dry storage cage can be rented for $75/month. A locked cold storage cage is $150/month and there is a combo deal of dry storage and cold storage cage for $200/month.
All members will need to provide their own smallwares such as knives, mixing bowls, sheet pans, and pots.
New members of The Commissary will pay a one-time orientation fee of $150 and provide a $200 security deposit.
